Marmalade

Looking for a tasty addition to hearty bread, Marmalade is an easy option.

First use a vegetable peeler to peel off the orange skin leaving the white pith behind. Stack then cut these peels into as narrow a strip as you can.
Peel the white part off of the orange and cut the oranges up into small pieces.
Collect up the white pith and put it into a cheesecloth bag. Put the pith, cut up fruit and rind in a pot and fill until one half of the orange mixture is covered with water and juice. Soak for 12 hours.
Take out the bag of pith, remove large pieces of orange membranes and any extra pith that might have snuck in and add one cup of sugar for each cup of oranges. Cook until mixture thickens. Make sure to stir continuously or this mixture will burn.
